Aqua Chile - Patagonia, Chile

Verlasso is Atlantic Salmon, farmed in Patagonia, Chile. The fish has a beautiful reddish-orange color, the meat has good resilience, and you can taste the sweetness. One of the first farmed Atlantic Salmon to receive a "Green" rating from Seafood Watch, more than ten years ago. BAP/ASC certifications.

Baja Kanpachi

Omega Azul - La Paz, Mexico

Longfin Amberjack (Seriola Rivoliana), farmed in the pristine water of La Paz, Mexico by Omega Azul Seafood. This fish is great for sashimi, carpaccio, crudo, poke, steamed, grilled, fried, etc. It is even a great source of clean dashi after all the edible parts are used. The flesh is structured, the flavor is rich, and the texture is buttery. Its shelf life is considerably longer, even for sashimi. We use trucks to import this fish into the US. Happy fish requires NO antibiotics, hormones, or steroids. ASC certified.

"Baja Blue'' ranched Bluefin Tuna is farmed from our local ocean in Ensenada, Mexico. The flavor profile is excellent, with no frozen mackerel/sardine smell and no weird texture left on your tongue. They use the local fish as feed and you can taste the difference. The total allowable catch volume has been strictly enforced/controlled by the Mexican government since 2014. We have been seeing more wild Bluefin Tuna along the coastline of Mexico and the US.
